Sugar Cookie Bars


I’ve always loved sugar cookies. Let’s be real, I’ve always loved all cookies. But sugar cookies? Those are near the top in Leslie’s list of delicious desserts. These are perfect cookies to whip-up on a random day, because most houses have all the ingredients on hand. And how can the pink frosting not entice you?

Things with me are going same-old, same-old. I’ve been getting quite a few rejection letters lately (life of an academic), so having desserts on hand is a must. However, I’m enjoying a relaxing weekend with Kyle and I turned in a final paper yesterday! 26 pages of pure genius (or so I’ve delusioned myself into believing). After this, we’re headed to our dinner reservations at the Spicebox – a special dining event offered at our university that hospitality students put on. What’s on the menu? Bruschetta, a raspberry salad, salmon with tequila sauce, and a meringue dessert. Ahhh… nothing like some yummy food and good company to keep the rejection letters from getting to you! “Sugar Cookie Bars”

Cookie Ingredients

  • 2 1/2 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup softened butter
  • 1 cup sugar
  • 1 egg
  • 1 1/2 tbsp sour cream
  • 1 tsp vanilla extract

Frosting Ingredients

  • 1/2 cup softened butter
  • 3 – 4 cups powdered sugar
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • dash of salt
  • some food coloring!


  1. Preheat the oven to 375 degrees and butter a 9 x 13 dish.
  2. In a bowl, combine flour, baking powder, and salt.
  3. In a larger bowl, cream butter and sugar. Make it light and fluffy, so your cookies will be nice and fluffy!
  4. Add egg to butter and sugar mixture. Add sour cream and vanilla.
  5. Bit by bit, add the flour mixture and stir until it’s nice and tasty!
  6. With greased fingers, press the batter into your greased baking dish. Bake for 17-20 minutes, letting the edges become golden.
  7. While the cookie is baking, prepare the frosting! Start by mixing together the butter, sugar, and milk.
  8. Add vanilla, salt, and food coloring.
  9. Once the cookies are out of the oven and cooled, frost the bars. Cut up. And enjoy!

Before I head out, I just wanted to show a surprise I got this week! Kyle sent me flowers for our anniversary! I adore flowers and usually purchase some for myself at the farmer’s market, but it’s always so nice to receive them unexpectedly!
